Maple Balsamic Grilled Peaches a la Mode {gluten free, vegan}


Happy, happy FRIDAY!!! Hope everyone made it through the week okay.  I don’t know about you but I am happy it’s finally Friday- this week has been a little rough for me. The heat and humidity has been out of control and my kids have taken their demonic minon status to the next level. 

Anyway, back to Friday and all things food! So, today we are featuring recipes with an ingredient we have never used before like Maple Balsamic! Traditionally it would go great with something like salad but since it’s summer, I wanted to kick it up a notch so I decided to combine it with some grilled peaches.

I originally wanted to feature fresh peaches with perfect grill lines, a splash of balsamic and seasoned with sprinkles of fresh thyme.  As my luck would have it though my grill lines didn’t look pretty enough (for my standards at least) so I had to improvise at the last second.

To prettify my peach I problem solved by slappin’ a scoop of ice cream on the grilled maple balsamic peach and finished off with a blackberry on top.

Honestly, this turned out WAY better than I expected.  The bittersweet bite of the maple balsamic compliments so well with the vanilla bean ice cream….it’s like OUT OF THIS WORLD good.  The grilled peach adds an almost candy-like sweet flavor.  Seriously, grilled peaches by themselves are a treat but the splash of maple balsamic in combination with the dairy free vanilla bean ice cream just brings it to the next level.  

PS. Luck was also not on my side while photographing these sweet peaches- I do not advise attempting to take pictures of a frozen dessert outside in 90 degree weather right before it’s about to rain.  😉

MAPLE BALSAMIC GRILLED PEACHES

A LA MODE


RECIPE

Ingredients:

  • 1 peach, halved and pit removed
  • 1/2 tbsp coconut oil
  • 1-2 tbsp maple balsamic vinegar 
  • 1 scoop dairy free/vegan vanilla bean “ice cream”
  • blackberries for garnish (optional) 
  • basil or mint for garnish (optional)

 

Directions: 

  1. Heat grill.
  2. Brush peach flesh with coconut oil and place face down on hot grill. 
  3. Grill for approximately 15 minutes or until soft. 
  4. Remove and spoon in maple balsamic where pit used to be and let sit for a minute to absorb. 
  5. Scoop vanilla bean ice cream on top and garnish with blackberry and basil. 
  6. ENJOY! :)
