Meatless Monday: Breakfast Wafflewich + Nicole’s Naturals Giveaway {Ended}

I recently had the chance to try out a new to me gluten free waffle and pancake mix from Nicole’s Naturals.  Over the last several years I have tried a variety of gluten free pancake and waffle mixes.  The hubby and I actually make a pancake breakfast for my kids every weekend, so I was excited to try out a new brand that I haven’t before and see what I could do to get a little creative in the kitchen. 

Unlike a lot of other waffle and pancake mixes I have tried, Nicole’s Naturals has only one gram of sugar per serving compared to other brands which can contain 9 grams of sugar per serving.  They are also wheat, dairy and soy free and contain 150 calories per serving- 1/3 cup.  Despite being gluten free and low sugar content they are very flavorful and actually taste homemade, even a little sweet!

In a way, they are homemade. The founder, Nicole Washington actually developed them when she was diagnosed as gluten intolerant.  Her recipe became so popular amongst family and friends that she was encouraged to package her product to sell and share. 

Making them is actually pretty simple too.  You just have to add eggs, butter and water or milk to the mix, whip it together and put it in the waffle iron or heat up the pan for pancakes.  I chose to make waffles since my skills are a bit lacking when it comes to perfecting pancakes.  

I actually decided only to make half of the batch, since I wasn’t sure we could mow down all 22oz after it was mixed and prepared.  In retrospect I totally should have and just frozen the leftovers for a quick breakfast during the week.  Though honestly the real reason I only made half the batch was because all I could think about was scarfing down this made up breakfast wafflewich.  If I had to categorize it, it for sure falls in the strange but good category.

The waffles definitely have a sweet taste to them and even a little spice but it really isn’t too overbearing.  The addition of a fried egg, tomato and spinach bring it to a whole other level taking it from sweet and stepping into the realm of savory.  

While I am sure the waffles would have tasted just as amazing with a drizzle of syrup, this seemed like a much better way to eat a balanced breakfast and refuel post long run! :)

Like I said before, the waffles are pretty simple to whip up.  I chose to sub out regular butter for coconut butter and use just water instead of milk of any kind, though you could use non-dairy milk such as almond, cashew, etc.  


Recipe {Serves 2}

Ingredients for the waffles: 

  • 2 cups of Nicole’s Naturals Gluten Free Waffle Mix
  • 1 egg
  • 2 1/2 tbsp coconut butter
  • 3/4 cup of water

Other ingredients: 

  • 2 pan fried organic eggs
  • 1 cup of baby spinach 
  • 4 large tomato slices
  • Dressing or dip of choice

Directions:

  1. Preheat waffle iron.
  2. Mix together waffle mix, eggs, butter and water and pour into preheated iron. 
  3. While waffles are cooking, pan fry to eggs to your liking.  I made mine over medium/hard.
  4. Remove once done- my waffle iron beeps but this will vary depending on model.
  5. Cut waffles in half diagonally and assemble layering waffle, spinach, tomato, egg and waffle. 
  6. Add your favorite dipping sauce or dressing (ketchup, sriracha, hot sauce) and enjoy!
