Meatless Monday: Caramelized Onion, Apple, & Arugula Pizza

Gluten Free Pizza

I haven’t had pizza in I don’t know how long.  I discovered a long time ago that any time I ate pizza I was sick and uncomfortable within hours after consuming it.  After some trial and error I came to find out it was because of gluten and probably had something to do with all the grease and cheese too. So, for the last several years I have pretty much avoided eating it unless I came across or found some gluten free crust worth trying.  Honestly though, the store bought stuff doesn’t really do it for me- I much prefer to make my crust at home.  I have tried a variety of recipes but I am always looking for something that is quick & tasty.  This quinoa flour crust recipe I found recently is pretty simple to make, plus I had all the ingredients which is always a bonus!

Toned & Fit gluten free pizza crust

I briefly considered playing mad scientist in the kitchen and trying to make my own but why reinvent the wheel right? What I did do was make up a combination of toppings that makes this perfect for a party appetizer or just when you’re feeling fancy.

Since I recently went apple picking, I had an abundance of apples laying around which obviously means some of them needed to be used for pizza. Duh.  Start with a layer of hummus, throw on some arugula, caramelized onions, apples and mushrooms, top with some pecans and goat cheese (if you please) and BOOM! You have yourself one sophisticated, fancy and kick butt GF/Meatless pizza!

First start with the quinoa flour pizza crust recipe from Toned and Fit then you can add any or all of these toppings that you’d like.  If you happen to be vegan, just omit the goat cheese- the crust and rest of the ingredients are all vegan friendly :)

So many of my favorite things. I had a caramelized onion, ham, and gruyere tart last night (one of my fave TJ's finds). SO GOOD. I actually have a post on the resurgence of pizza in our lives coming up haha

Haha, oh no! I have had some terrible GF pizzas too. One was in Chicago (surprisingly) they advertised that they had GF pizza and when it arrived it was a greasy sausage patty with cheese ....um, no thanks! :P

OMG!!! This sounds like my new favorite pizza! I'm gonna try that quinoa flour crust too. Been looking for an alternative. If you lived closer, I'd be over there for lunch.

This looks amazing! Last night for dinner I made grilled pizza - ricotta cheese as the "sauce" topped with swiss chard that I sautéed in olive oil, garlic, and crushed red pepper. It is Mario Batali's recipe! Delicious!

Yummy. I love pizza but it hurts my tum sometimes, too. I blame the grease and cheese! I'll have to try this one.

Ooooh love that combination! I actually made a very similar flatbread this summer, although I used pear instead of apple. Apple would be loooveeelly though! Love the idea of quinoa crust, very clever! Thanks for linking up with us!
