Meatless Monday: Caramelized Onion, Apple, & Arugula Pizza

I haven’t had pizza in I don’t know how long.  I discovered a long time ago that any time I ate pizza I was sick and uncomfortable within hours after consuming it.  After some trial and error I came to find out it was because of gluten and probably had something to do with all the grease and cheese too. So, for the last several years I have pretty much avoided eating it unless I came across or found some gluten free crust worth trying.  Honestly though, the store bought stuff doesn’t really do it for me- I much prefer to make my crust at home.  I have tried a variety of recipes but I am always looking for something that is quick & tasty.  This quinoa flour crust recipe I found recently is pretty simple to make, plus I had all the ingredients which is always a bonus!

I briefly considered playing mad scientist in the kitchen and trying to make my own but why reinvent the wheel right? What I did do was make up a combination of toppings that makes this perfect for a party appetizer or just when you’re feeling fancy. 

Since I recently went apple picking, I had an abundance of apples laying around which obviously means some of them needed to be used for pizza. Duh.  Start with a layer of hummus, throw on some arugula, caramelized onions, apples and mushrooms, top with some pecans and goat cheese (if you please) and BOOM! You have yourself one sophisticated, fancy and kick butt GF/Meatless pizza!

First start with the quinoa flour pizza crust recipe from Toned and Fit then you can add any or all of these toppings that you’d like.  If you happen to be vegan, just omit the goat cheese- the crust and rest of the ingredients are all vegan friendly :)

Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare crust according to recipe instructions.
  3. Slice onions, apple & mushrooms.
  4. In a pan, heat olive oil then add onions and cook until brown/caramelized.
  5. Remove from pan and set aside.
  6. Separately add mushrooms and apples to pan and cook until tender then remove.
  7. To assemble the pizza: spread a layer of hummus then top with arugula, onions, apples, pecans and goat cheese.
  8. Bake for approximately 10 mins or until crust begins to brown.
  9. Remove from oven, let cool & enjoy! :)
