Meatless Monday: Green Goddess Sandwich


Green Goddess Sandwich {Gluten Free}

 Usually during the day for lunch I have a smoothie of sorts but lately with my mileage increasing due to half marathon training, I need something to keep me more satisfied. I am not a big fan of deli meat and I don’t often have fresh cooked meat available so often times I end up making a veggie sandwich of sorts.

I will admit that this one is a bit fancier than what I normally throw together but if you have these ingredients available to you- I highly recommend making this gorgeously green sandwich.

 I choose to eat it without any dressing mostly out of pure laziness but it would taste delicious with a drizzle of olive oil, squirt of lemon and a dash of pepper.

 Doesn’t it look so pretty? It was almost too gorgeous to eat but I did and it was SCRUMPTIOUS! If you wanted to make it vegan you could eliminate the mozzarella and replace it with some hummus or even some tofu!


Recipe

Ingredients:

  • 2 pieces of gluten free bread, lightly toasted (I used Udi’s)
  • 2 leaves of hydroponic Boston Lettuce
  • 6 slices of seedless cucumber
  • 1 piece of fresh mozzarella cheese
  • 1/4 cup (or handful) of Clover Sprouts
  • 1/2 avocado, sliced
  • olive oil, lemon & pepper for dressing (optional) 

Directions:

  1. Assemble the sandwich by placing cheese on one side and topping with cucumbers. 
  2. On the other side place leaves then top with avocado, sprouts and dressing if desired. 
  3. Place sandwich halves together and enjoy! :)

Green goddess dressing from The Melting Pot might be one of my favorite things of all all time. Seriously. Also maybe one of the worst things for you of all time. This is a green goddess of a different variety, but she looks like a nice lady indeed :D

    I know- I rarely have cheese but every once in a while I crave mozz or goat cheese. I would say maybe some hummus or tofu if you like it.

I love all the green, and avocado definitely makes everything in the world 13948x better. ;P There was this salad place I went to once that had an amazingggg Green Goddess dressing that I need to learn to recreate at some point in my life! :O I'd probably put some on this and munch away! <3

I had no idea clover sprouts were possible or edible! I thought they were alfalfa sprouts in the pictures until I saw the caption. I'd certainly give them a try with those other ingredients.

If you made this sandwich without cheese, you'd want to use a dressing with some fat in it so that you can absorb the vitamins from the lettuce--they are fat-soluble.

This looks absolutely fabulous and definitely right up my alley! Can never go wrong with avocado and seedless cucumber. Yum!! I might even add a little cayenne to give it a kick. :)

I've never tried Udi's bread but I've looked at it a few times. I wasn't sure how it would be since it's frozen. So, it doesn't get soggy? Certainly doesn't look like it from the picture!

    Thank you! The combo of avocado and cucumber is quite delicious! I always toast the Udi's either lightly (for something like this) or a little more brown for something like toast. It is honestly the best brand that I've tried!
