Meatless Monday: Grilled Corn with Cilantro Lime Butter {Dairy Free}

One of the foods that always reminds me of summer is corn on the cob.  Around where I live, there are corn fields galore and growing up corn on the cob was pretty much a staple on our summertime dinner tables. 

For all of my childhood and most of my adulthood I’ve enjoyed my corn the traditional way; husked removed, boiled and served with a side of butter.  It wasn’t until recently that I took a stab at making corn on the grill and let me tell you, I didn’t know what I was missing.

If summer had a taste I believe it would be grilled corn slathered in this dairy free cilantro-lime butter.  Seriously, the combination of corn, cilantro and lime just SCREAMS summer and makes the perfect side dish for any BBQ favorite!

  • 6 ears of corn 


For the cilantro-lime butter:

[adapted from Food Network]
  • 8 tbsp coconut spread (I used Earth Balance)
  • 1 lime, juiced and zested 
  • 1/4-1/3 cup chopped cilantro
  • 2 tsp sea salt 



  1. Peel back corn husks to the stem, leaving attached.
  2. Remove silk and fold husks back over corn. 
  3. Soak in pot of cold water for 10 minutes. 
  4. While corn is soaking, mix coconut spread, cilantro, lime zest, juice and salt together in a bowl with a spatula. 
  5. Heat grill, drain the corn, place on grill and cover.
  6. Turn every few minutes, cooking until tender and husks are charred. (About 15-20 minutes) 
  7. Remove using thongs and carefully peel back husks, exposing corn.  
  8. Butter corn while still hot and serve.
  9. Enjoy!

Yummm you said the magic word Cilantro. I just planted some and I hope it grows this year because I spend a fortune on it. I would sub out the coconut spread for ghee but I bet it would be JUST as awesome. Also I keep coming up as spam on your blog how do I solve this?

This looks perfect for a summer BBQ. I love grilled corn, but the cilantro lime butter would make it even better.

YUM! I make something like this but add a little kick I add cayenne pepper and spice and make a chili cilantro lime butter. Of course I have been adding a little extra lately but it has been too much for the girls so I should just make two batches one of these and one of mine.

Yum, this sounds good! I usually eat my summer corn plain, but I love cilantro everything, so this sounds like a good option for sometimes!

We grilled corn on the grill last night and it was delish! I wish I would have seen this first but I will remember for next time- that cilantro lime butter sounds fantastic!

I've heard of chili and butter on corn on the cob, but lime and cilantro just sounds even more amazing! Will have to try this out sometime during the hot summer months for sure!

A big YES to the cilantro and lime combo. Grilled corn on the cob is so so tasty. Growing up my dad would grill corn on the cob and drizzle this mixture of canola oil heated with lots of chopped green onions. Sounds gross, but it was so green onion-y in a delicious way haha.
