Meatless Monday: Grilled Corn with Cilantro Lime Butter {Dairy Free}

One of the foods that always reminds me of summer is corn on the cob.  Around where I live, there are corn fields galore and growing up corn on the cob was pretty much a staple on our summertime dinner tables. 

For all of my childhood and most of my adulthood I’ve enjoyed my corn the traditional way; husked removed, boiled and served with a side of butter.  It wasn’t until recently that I took a stab at making corn on the grill and let me tell you, I didn’t know what I was missing.

If summer had a taste I believe it would be grilled corn slathered in this dairy free cilantro-lime butter.  Seriously, the combination of corn, cilantro and lime just SCREAMS summer and makes the perfect side dish for any BBQ favorite!

Recipe

Ingredients:

  • 6 ears of corn 

 

For the cilantro-lime butter:

[adapted from Food Network]
  • 8 tbsp coconut spread (I used Earth Balance)
  • 1 lime, juiced and zested 
  • 1/4-1/3 cup chopped cilantro
  • 2 tsp sea salt 

 

Directions:

  1. Peel back corn husks to the stem, leaving attached.
  2. Remove silk and fold husks back over corn. 
  3. Soak in pot of cold water for 10 minutes. 
  4. While corn is soaking, mix coconut spread, cilantro, lime zest, juice and salt together in a bowl with a spatula. 
  5. Heat grill, drain the corn, place on grill and cover.
  6. Turn every few minutes, cooking until tender and husks are charred. (About 15-20 minutes) 
  7. Remove using thongs and carefully peel back husks, exposing corn.  
  8. Butter corn while still hot and serve.
  9. Enjoy!
