Meatless Monday: Honey & Hemp Peaches ‘N Cream on Toast
Happy Meatless Monday! Who is ready to kick start the week with somethin’ a little sweet sans meat?! I came up with this little number last week when I was shopping for some raw honey at my local health foods store for the sweet potato brownies I shared for Foodie Friday.
As I was strolling through the aisles I saw some hemp seeds which reminded me that I had some sitting at home that I needed to use. I’ve baked with them before and even sprinkled them on my salads but nothing really beyond that.
With the honey I just picked up in had, a little light bulb went off and I was inspired to use them with some fruit…on toast with cream cheese. Not entirely sure what sequence of thoughts lead to the cream cheese/toast but let me tell you, I’m happy it did.
I was excited to get home and start constructing my new creation. I had the honey, the hemp seeds, multigrain gluten free toast and the Daiya cream cheese I had purchased to make the vegan spinach and artichoke pasta a few weeks ago. All I had to do was decide on a fruit- I ultimately settled on peaches because they are naturally sweet and pair nicely with honey and the cream cheese.
I suppose you could use another fruit like strawberries but I just have to say this combo is amazing and if you’re a fan of peaches, I suggest you try it!
Simply toast, spread, slice, drizzle and sprinkle then you’re good to go! 😉
No matter what fruit you choose (peaches!!!) the best part is that it’s simple to make and is perfect for a quick, healthy breakfast.
Honey & Hemp Peaches ‘N Cream on Toast
- 1 piece of gluten free multigrain bread
- 2 tbsp Daiya plain cream cheese
- 1/2 peach, sliced
- 1 drizzle of raw honey
- 1 sprinkle of hemp seeds
- Toast bread then spread vegan cream cheese on top.
- Place sliced peaches on top of bread, drizzle with honey and sprinkle with hemp seeds.
