Meatless Monday: Nektar Naturals Honey + Sea Salt Roasted Almonds


Every once in a while, I like me some honey.  Whether it be in some tea or on toast, I enjoy the natural added sweetness of raw honey.  What I dislike about honey and anything else sticky for that matter including maple syrup (shhhh don’t tell the Upstate, NY maple trees) is the stickiness.  

Honestly, I despise messes and anything sticky and have for as long as I can remember.  Maybe it stems from my days as a waitress during the breakfast shift where everything was always covered in syrupy stickiness?! I have no idea.  

Anyway, thankfully a company called Nektar Naturals has solved my messy sticky dilemma and created honey crystals.  Yes, I said honey crystals.  Picture the convenience of cane sugar but in the form of honey or honey without all the sticky mess and are naturally gluten free and non GMO! 

Nektar Naturals Honey + Sea Salt Roasted Almonds

Nektar Honey Crystals are perfect in hot tea, sprinkled in cold cereal, in your morning oats and even in yogurt.  They offer a delicious crunchy glaze which is why I thought they’d be the perfect way to add some natural honey sweetness to roasted almonds without all the gooey mess! 

Easy Honey and Sea Salt Roasted Almonds Recipe {Less than 25 minutes, Meatless Monday, Nektar Naturals, Gluten Free, Healthy Snack, Football Snack, Honey Crystals}

Seriously, these roasted almonds are so easy to make that all you have to do is preheat the oven, mix together the almonds with some Nektar Honey Crystals, coconut oil, sea salt then put them on a baking pan with some parchment paper, bake and viola….you have some incredibly tasty roasted almonds.

While I toyed with the idea of adding some spice, I decided to keep it simple and just sticky with sweet and salty to satisfy any kind of craving.

Honey and Sea Salt Roasted Almonds Recipe {Meatless Monday, Nektar Naturals, Gluten Free, Healthy Snack, Football Snack, Honey Crystals}

Regardless of how you decide to devour them, they the perfect combination of a little bit of salty with a little bit of sweet and easy to make without a whole lot of mess! 

HONEY + SEA SALT ROASTED ALMONDS


RECIPE

Ingredients:

  • 1 9 oz bag of raw almonds, skin on
  • 1 tbsp coconut oil 
  • 2-3 tbsp Nektar Honey Crystals 
  • 1/2 tbsp sea salt 

Directions: 

  1. Preheat oven to 375. 
  2. In a medium bowl, combine almonds, coconut oil, honey crystals and sea salt. 
  3. Line a baking pan with parchment paper. 
  4. Spread almonds evenly over parchment paper. 
  5. Place in oven and bake for approximately 10 minutes, checking to make sure they don’t burn.
  6. Remove and let cool. 
  7. Mix almonds with extra honey crystals if desired.  
  8. Serve and enjoy!
