Meatless Monday Night: Chocolate Peanut Butter Football Pudding Dip


As an official Meatless Monday blogger, I was recently asked if I wanted to participate in their #MeatlessMondayNight campaign on behalf of Silk and join celeb chef Candice Kumai (Iron Chef America, Top Chef), and professional football players – Rashad Jennings, Justin Pugh and Geoff Schwartz to ‘Sideline Meat’ on Meatless Monday nights!

My obvious answer was YES….I already use Silk dairy free milk (every day) and am a huge fan of football!  If you’ve been a reader of my blog for a while then you’ll know that I am a die hard New York Giants fan and often post meatless football friendly snacks and recipes on Monday to celebrate the season.  

Over the last several months I have share recipes such as Roasted Buffalo Chickpeas, Sweet Potato Sliders, Honey + Sea Salt Roasted Almonds, and Salted Peanut Butter Popcorn.  Since most of my recipes have been of the savory variety, I figured I’d switch things up and share something sweet!

This football shaped dessert is made up of delicious and dairy free Silk Chocolate Almond Milk, cocoa powder, chocolate peanut butter and vegan chocolate protein powder.  

The best part? It’s super simple to make and just requires a bowl and spoon to mix all the ingredients together which means you can whip it up just a few minutes before kickoff or during halftime after you’re done munching on all the other Meatless Monday Night football goodies!

CHOCOLATE PEANUT BUTTER FOOTBALL PUDDING DIP


 

RECIPE

Ingredients: 

  • 1/3 cup vegan chocolate protein powder (can sub 1/3 cup sugar)
  • 2 tbsp cocoa powder 
  • 1/3 cup chocolate peanut butter (I used Peanut Butter & Co.)
  • 3/4 cup Silk Chocolate Almond Milk
  • White decorative frosting

 

Directions: 

  1. Combine all ingredients together in a medium mixing bowl and stir until thoroughly combined. 
  2. Transfer to a football shaped bowl and spread until smooth. 
  3. Pipe on football laces with white frosting. 
  4. Serve with gluten free munchies and enjoy! :)
