Meatless Monday: Open Face Mexican Omelet {Gluten Free, Dairy Free}


Happy Meatless Monday! My post is going to be short and sweet today as I had a very busy weekend of celebrating.  First, on Saturday, I ran the CNY Springtime 10k followed by a surprise birthday party for my brother in law then on Sunday, my sister’s bridal shower!

Usually if I know I am going to be busy I plan my posts in advance but life has really just been super crazy and by the time I was able to sit down on Sunday night my kiddos were requesting cuddles and of course, I couldn’t deny them.  

The only thing I had time for was to put together this quick Open Face Mexican Omelet that is super easy to make and especially perfect for brinner (breakfast for dinner).

Recipe 

Ingredients: 

  • 3 eggs, whisked 
  • 1/2 tbsp olive oil
  • 1/4 cup yellow corn kernels (either canned or frozen and defrosted)
  • 1/3 cup black beans (either canned or frozen and defrosted) 
  • sea salt and pepper 
  • chili powder 
  • 1/2 avocado, diced
  • 2 tbsp salsa
  • 1-2 tbsp fresh chives, chopped

Directions: 

  1. Grease and heat large pan on stove top to medium heat and pour in whisked eggs. 
  2. Cook approximately 3 minutes without stirring then flip over with a spatula and cook for another minute. 
  3. Carefully slide egg off pan onto dish.
  4. Reheat pan with olive oil on medium heat and add in corn and black beans.
  5. Season with salt, pepper and chili powder to taste and stir around pan until black beans and corn are evenly heated.
  6. Spoon bean/corn mixture on top of egg, add avocado salsa. Garnish with chopped chives.
  7. Enjoy!
