Meatless Monday: Strawberry Fields Salad
Happy Meatless Monday! Today I am presenting to you one of many strawberry recipes I plan to make and share in the next few weeks.
Not only are strawberries in season here but I also happen to live right around the corner from one of the best and sweetest strawberries fields/stands in the area.
This past Saturday, Ferlito’s Berry Patch announced that their fields were ripe for the pickin’ and officially opened up their stand for business. If you live locally then you know just how delicious and sweet Ferlito’s strawberries are, really nothing compares and obviously I couldn’t resist a quick trip around the corner to grab some juicy berries for myself.
The stand was full of large, luscious strawberries picked fresh from the field.
And the berry patch was full of beautiful berries just begging to be picked…
Of course I took some home with me and promptly washed them up to be devoured.
Since it was in the 80’s and extremely humid, something crisp and cool was calling my name so I incorporated these beauties into a summer salad that tasted like it was straight from the strawberry fields.
The strawberries, of course, are the star of the salad accompanied by some blueberries along with feta cheese and avocado for creaminess, chopped walnuts for some crunch all brought together by a drizzle of balsamic glaze on a bed of spinach.
- 2.5-3 ounces baby spinach leaves
- 1 cup of fresh picked strawberries, halved
- 1/4 cup fresh blueberries
- 1/2 avocado, sliced
- 1/4 cup chopped walnuts
- sprinkle of feta cheese (about 1/8 cup), optional
- drizzle of balsamic glaze
- On a large plate, place spinach and top with strawberries, blueberries, avocado, walnuts and cheese.
- Drizzle balsamic glaze on top.
