Meatless Monday: Super Greens Ice Cream {gluten, dairy, soy free}


Happy Meatless Monday!!! How about some “ice cream” jam packed with fruits, veggies and superfoods to kick off the week?! How is that possible you ask? Well, let me tell you! 😉 

Remember I mentioned meeting the creators of Pro Alpha Nutrition when I was at Blogfest last month? I  first made mention of them briefly in my Meatless Monday on-the-go post and then again when I made those super yummy Double Chocolate Sweet Potato Protein Brownies

When I first sampled their greens and protein powders at the IDEA World Expo I was really impressed. Not only do they taste AWESOME but they are also jam packed with good-for-you ingredient without all the bad-for-you stuff that normally comes with it.  I just had to get my hands on some for further taste testing and the guys were nice enough to send me some of their products to taste, test, try and create some recipes with!

Let me tell you about the chocolate protein first because it’s out of this world.  Immediately upon opening up the bottle, you get a waft of chocolate scented heaven.  Literally smells so delicious that I want to just start throwing back scoops of powder straight from the tub.  

The reason it smells so chocolatey is because it’s made with straight up natural cocoa blended with pea and brown protein isolates, Suma root and sacha inchi powder.  It’s also vegan, non-GMO, gluten, soy and dairy free and also free of artificial flavors and sweeteners all while packing 20 grams of protein per serving.

I have tried A LOT of vegan chocolate protein powders and this is by far one of the least gritty, easiest to blend and best to bake with that I have tried.  It is also pretty reasonably priced in comparison to other high quality vegan protein powders, which is always a bonus! 

The Pro Alpha Greens powder is equally as delicious and is also non-GMO, gluten, dairy, soy free along with being free of shellfish, nuts, wheat, dairy, eggs, preservatives or any artificial colors, flavors and sweeteners.

Packed with phytonutrients,  each serving of Pro Alpha Greens is equivalent to 20 servings of fruits and veggies along with 30 billion probiotics and 700mg of digestive enzymes. 

What makes Pro Alpha Greens different from other powdered super greens that I have tried is the Mixed Berry flavor which makes getting your veggies in taste more like a treat and less like chore! While it’s perfect all by itself mixed with just non-dairy milk or water, I thought I would take it up a notch (trick my kids a little) and serve it “ice cream” style!

This “ice cream” or should I say frozen greens and coconut cream is super simple to make and really only requires two ingredients and an overnight stay at Hotel Freezer! 😉 The reason I say that this is kid friendly is because it really tastes like berry ice cream- I suppose I could have topped it with some sprinkles of sorts but goji berries are kinda like nature’s version of grown-up sprinkles, right?!

SUPER GREENS ICE CREAM


RECIPE

Ingredients:

  • 1 can coconut milk (I did not use full fat though you can)
  • 2 scoops Pro Alpha Greens
  • 2 tbsp Vanilla Coconut Butter (optional)
  • goji berries, sprinkles or whatever your heart desires for topping :) 

 

Directions: 

  1. Combine coconut milk, greens and coconut butter in a blender and blend until smooth. 
  2. Pour into a bowl or small individual sherbet dishes and place in freezer overnight/until frozen. 
  3. Remove from freezer and let thaw for 10 minutes or so as it will be icy. 
  4. Scoop, dish, sprinkle and enjoy!
