Happy Monday once again! I have lots going on this week and had quite an eventful Sunday teaching my first ever DVRT class (more to come about that on Wild Workout Wednesday) which means I had to put together this recipe post rather quickly.

Thankfully, the dish didn’t take long to make either so I was able to whip it up and photograph without too much effort.  Don’t judge too much based on my photos- this really is quite delish and a fun way to enjoy everyone’s favorite low carb sub: cauliflower. 

I also kept it vegan by subbing in Daiya cheese though if you can eat/want dairy this could easily be made cheese-tastic with a simple swap!

Twice Baked Cauliflower {Meatless Monday, Gluten Free, Vegan, Vegetarian, Low Carb}

TWICE BAKED CAULIFLOWER

{VEGAN, GLUTEN FREE}


RECIPE

Ingredients: 

  • 1 head of cauliflower
  • 2-3 tbsp Daiya cream cheese
  • 1/2 cup + 1/2 cup Daiya cheddar cheese
  • 1/2 scallions, minced 
  • Sea salt, garlic powder + fresh ground pepper to taste. 

Directions:

  1. Preheat oven to 350 degrees.
  2. Remove stem from cauliflower and chop rest into small florets.
  3. Place in a glass dish with 1/2 cup of water, cover and microwave for approximately 15 minutes.
  4. Drain water and transfer to a large mixing bowl and mash.
  5. Season with salt, pepper and garlic powder then fold in scallions, Daiya cream cheese and 1/2 cup of Daiya cheddar cheese.
  6. Transfer into baking dish and evenly sprinkle remaining 1/2 cup of Daiya cheddar cheese. 
  7. Bake for approximately 25 minutes. 
  8. Serve hot and enjoy! :)

NOTE: You can easily sub Daiya vegan cheese out for regular cheese- no need to alter measurements.
