Meatless Monday: Warm Balsamic Brussels Sprouts + Pear Slaw

Warm Balsamic Brussels Sprouts and Pear Slaw

This past weekend the weather here in Upstate New York was so warm that it was spring like.  On Saturday I went for an 8 mile long run outside and it was so warm that I almost took my long sleeve top off.  Later in the day it got even warmer and temps reached the 50’s! WHAT?! That is craaazy and nearly unheard of in the typically frozen tundra of Central New York.

Anyway, despite the CNY heat wave, I have been craving warm and wintery meals especially dishes with Brussels sprouts.  Even though I used a winter veggie, I was inspired to give this dish a summery flare by creating it “slaw” style but served warm instead of cold!

This Brussels sprouts and pears slaw is mixed with caramelized onions, toasted walnuts and a splash of balsamic.  It is incredibly quick to make and would be perfect as a weeknight main dish or a side dish to a larger meal.  Meatless Monday: Warm Balsamic Brussels Sprouts + Pears SlawMeatless Monday: Warm Balsamic Brussels Sprouts + Pears Slaw

Ohhhhh my favorite!!! Baby Cabbages for ALL. I think I can make this recipe whole 30 approved as well. YEAH! I need new ideas living on ground beef, eggs and lettuce can get boring for 30 days. Love it! (I feel like a 3rd grader with all the exclamation point but it's raw emotion!) :)

I must say, I'm not a huge fan of Brussels sprouts. However, in recent months I've discovered I don't mind them as much as I did when I was a kid. I'll give this a whirl! Thanks for sharing!

They are an acquired taste- but the pears give it a nice sweetness. Let me know what you think if you make it :)

Hi Annmarie! I still need to try having a Meatless Monday one day. I had some tasty brussels sprouts made by my Momma last week as I was visiting Florida, but this sounds even tastier. Glad you're getting some warm weather for a change:) Happy Monday!
