Melon & Cucumber Crunchy Fruit Salad


I don’t know about you but as soon as the warm weather comes around I start to crave ALL the fruit.  While I am a blueberry fan all year round (I keep a frozen stockpile), I tend to hold off on other varieties until they start to become more seasonal….or at least more readily available to purchase fresh.  

I am especially fond of melon.  I really don’t like my fruit to be too sweet so watermelon and cantaloupe really hit the spot.  Not only are they refreshing but their high water content also helps to ward off dehydration.

While I typically enjoy them in all their natural goodness, there are times when I wanna dress up my fruit with a little mint and crushed pistachios and make it feel a bit fancy.

Maybe fancy really isn’t the word – if I wanted it to be fancy I probably at least could have used a melon baller to make this look just that much prettier but hey….who has time for that? 

Anyway, however you cut it (get it?!), it doesn’t change all the amazing benefits of this easy-peasy crunchy summer salad. 

As I mentioned before, both cantaloupe and watermelon are super hydrating plus they both pack a pretty big nutritional punch.  Just one cup of cantaloupe has 100% of the daily recommended values of vitamins A and C and watermelon apparently contains a natural occurring chemical that accelerates lactic acid removal- who knew?! 

In addition to those juicy fruits I also threw in cucumber which can also help quench your thirst along with freshly shredded mint for extra flavor and crushed pistachios for added texture and crunch! Of course you could also add feta or goat cheese for some creaminess if you desire but I chose to leave it out because it tasted pretty amazing as is.

Melon & Cucumber Crunchy Fruit Salad


 

RECIPE

Ingredients: 

  • 1 lb cubed cantaloupe 
  • 1 lb cubed watermelon 
  • 1 sliced cucumber 
  • 1 tbsp squeezed lime juice 
  • 1/8 to 1/4 cup crushed pistachios 
  • freshly shredded mint, to taste 

Directions: 

  1. Combine cantaloupe, watermelon and cucumbers in a large bowl.  Drizzle with lime juice, mix in pistachios and garnish with mint. 
  2. Enjoy! :)
