Mimosa Muffins | Gluten Free & Dairy Free


I have the most amazing recipe to share with you today.  In fact, it may be one of the more brilliant things that I’ve ever thought of but before I get into it, I have to tell you how it all came about. 

You see, about a week ago, my November POPSUGAR Must Have Box arrived in the mail.  The box contained the most glorious things.

Really, everything you might need for a holiday party including a Kendra Scott Elaina Rose Gold Bracelet {which I’m kinda obsessed with and can be seen on Instagram here}, Oogies Toffee Butter Popcorn, Meri Meri Star Party Picks, Stowaway Cosmetics Dawn to Dusk Palette PLUS two fabulous home items, the AJ Goods Nest Wire Bowl AND a Pehr Chambry Runner in Wine. 

With so many amazing items in one box it was hard to choose a fav but being a foodie and all, the wire basket and gorgeous table runner really spoke to my heart.  So much so in fact, that they inspired these gluten free, dairy free, sparkling mimosa muffins.

To be honest, this recipe wasn’t the first thing that came to mind.  All I knew is that I wanted to showcase some muffins in the basket.   I pictured the wire basket on it’s side a top the chambry runner with delicious pumpkin chocolate muffins toppling out of it.  

Then I realized that the idea looked better in my head.  What really belonged in the basket was fruit but how ever could I incorporate a basket of fruit into a recipe? Then it dawned on me…what if that basket of fruit was oranges and those oranges were fresh squeezed into mimosa and then made into muffins?

Okay, clearly that is exactly how these muffins are made but THAT is how the idea for them came about.  To me, oranges equal mimosas (because I don’t typically consume oranges in any other way) but if I were going to eat them then they’d be in the form of muffins with a champagne glaze drizzled on top.

Not following my logic? No worries.  Just know that these Mimosa Muffins, elegant table runner and wire basket are everything you need to throw the best brunch ever or ya know, just to jazz up your Monday morning 😉

These Mimosa Muffins are the perfect treat for an allergy friendly brunch with your girlfriends! [paleo, gluten free and dairy free]

MIMOSA MUFFINS [GLUTEN & DAIRY FREE] 


RECIPE

Ingredients: 

For the muffins

  • 2 cups almond flour
  •  1/2 tsp baking soda
  • pinch of sea salt 
  • zest of one medium orange
  • 3 eggs
  • 2 tbsp coconut oil, melted
  • 4 tbsp raw honey 
  • 1 tsp vanilla extract
  • 2-3 tbsp fresh squeezed orange juice

For the champagne glaze: 

 

Directions: 

  1. Preheat oven to 325 degrees and grease or line muffin tin.
  2. In a medium bowl, combine almond flour, baking soda, salt and orange zest. In a separate bowl, combine the eggs, coconut oil, honey, vanilla extract and orange juice. 
  3. Add the dry ingredients to the wet ingredients and mix until well combined. 
  4. Spoon or scoop batter into muffin tin.
  5. Place in the oven and bake for 20-25 minutes. 
  6. While muffins are baking, prepare the glaze.  In a small saucepan, bring champagne and honey crystals to a boil then reduce to simmer for about 10 minutes while stirring frequently. 
  7. Remove from heat and spoon glaze over muffins while cooling.  Sprinkle extra honey crystals on top for a “sparkle”, if desired. 
  8. Serve and enjoy :)
