7 Nights of Gluten Free Meatless Meals!

So I had every intention of sharing a brand new, kick butt meatless meal for today but it turned out to be an epic fail.  It happens sometimes, I don’t often go by a recipe so most of the time I am just winging it.  Thankfully, it has turned out in my favor most of the time or is salvageable in some way but this time, not so much.  

Since I tend to be a perfectionist, I normally would have tried, tried again until I got it right or at least made something worth sharing.  Unfortunately, since I am short on time and have been gone to NYC all weekend (I’m actually on my way back as you’re reading this), I didn’t have time to play around.  

So, instead of posting a sub-par recipe I decided to round up my top 7 meatless meals and lump them together in one post so you can either choose from one or celebrate Meatless Monday all week long! 

Monday:

Baked Falafel with Roasted Red Pepper Sauce. Gluten Free, Vegan, Meatless Monday

Baked Falafel with Roasted Red Pepper Tahini Sauce 

As with all my recipes, this one is gluten free plus it is also vegan! This has also been the top meatless recipe on my site but also the number one recipe out of all the ones I have posted.  It is delicious, the falafel is much healthier since it’s baked instead of fried and the red pepper tahini sauce is TO DIE FOR! 

Tuesday:

Baked Italian Avocado For One {Gluten Free, Vegan}

Italian Baked Avocado for One 

If you’re short on time and don’t need to cook for the family, this Italian Baked Avocado for One is the perfect solution.  It is really quick to make and seriously delicious.  Baking an avocado might seem a little foreign at first but believe me, you won’t regret trying it!

Meatless Monday: Veggie Burger & Quinoa Stuffed Portobello Mushrooms

Veggie Burger & Quinoa Stuffed Portobello Mushrooms 

This is one of the first meatless meals I made as a Meatless Monday blogger.  You can even tell it’s an earlier recipe due to the poor photography.  This was before I learned that taking food photos at night with your iPhone was a bad idea.  Regardless of the grainy photo, it is still all sorts of amazing and tasty plus it’s vegan too! 

Thursday: 

Southwestern Stuffed Sweet Potatoes {Gluten Free, Vegan}

Southwestern Stuffed Sweet Potatoes 

Another quick weeknight meal, are these Southwestern Stuffed Sweet Potatoes! The potato is mixed with cajun spices then topped with black beans, avocado and of course, sriracha making them A-MAZING. 

Friday:

Thai Sesame Peanut Spaghetti Squash 

If you’re looking for a perfect Friday night meal, look no further than this Thai Sesame Peanut Spaghetti Squash dish.  I always crave Thai on Fridays for some reason and this hits the spot….so fantastically flavorful you won’t even miss the meat! 😉 

Saturday: 

Mushroom Black Bean "Meatballs" {Gluten Free}

 

Black Bean & Mushroom Meatballs  

If you’re feeling a little fancy, these meatless “meatballs” make the perfect dish if you want to indulge in a meatball craving.  They honestly taste a lot like meatballs especially when you add your favorite marinara sauce! 

Sunday: 

Vegan Quinoa Lasagna {Gluten Free}

Vegan Quinoa Zucchini Lasagna

Last but not least, this Vegan Quinoa Zucchini Lasagna is perfect for Sunday dinner.  It is a bit labor intensive but like any Sunday dinner, it is worth all the time and effort once you see the joy in your families faces as they mow down this delicious meatless meal.
