No Bake Tiramisu Bites {Paleo, Gluten Free, Vegan}

Do you ever start out making something only to totally mess it up and turn it into something way better than what you intended?  

Well, that is the case with what happened with this recipe today.  

You see, our Foodie Friday theme is “Pinterest Curiosities” and I had every intention of sharing an adapted recipe of some Paleo Pumpkin Cheesecake Bites I had found a while back.  I figured they’d be perfect to share since everyone is all #PumpkinSpiceISLife right now plus they seemed easy enough to make my own….

…which is exactly what I did except now they are no longer pumpkin and the recipe is not the same at all!

The pumpkin bites I originally planned to make became tiramisu bites instead and they’re probably one of the best kitchen “mistakes” I’ve ever made.  

Tiramisu just ~happens~ to be my favorite dessert and I have been struggling to come up with a way to make them so that they aren’t full of dairy since they are traditionally made with mascarpone.  I had all but given up until my little kitchen “mishap” yesterday.  

For whatever reason, I thought it would be a fab idea to add some fine coffee grounds to the base of the pumpkin cheesecake bites.  Except, I didn’t add it to the base….I added it to the cheesecake layer.  

My immediate thought was “welp, THERE GOES THAT” but then I decided to take a spoonful of my mistake and eat my self pity away.  As soon as I tasted it, I knew it could make something of itself….it was far too amazing to just dump into the trash.

SO, after some finagling of what I had left of my ingredients, I was able to come up with these ridiculously delicious Paleo Tiramisu Bites!

Paleo Tiramisu Bites {Gluten Free, Vegan}



For the crust:

  • 1 cup pitted dates
  • 1/2 cup almond flour 
  • 1 tbsp cacao powder
  • 2 tsp coffee extract
  • 1 tbsp unsweetened almond milk

For the top layer: 

  • 1 cup of soaked cashews (soaked overnight)
  • 3/4 cup of pitted dates
  • 1/3 cup almond flour 
  • 1 tbsp vegan vanilla protein powder, I used Nuzest (affiliate link)
  • 1 tsp fine coffee grounds 
  • 1 tbsp almond milk



  1. Line mini muffin tin with parchment paper and set aside.
  2. Place crust ingredients into food processor and pulse until combined then press evenly into bottom of muffin pan and place in freezer. 
  3. Place top layer ingredients into food processor and pulse until smooth and combined.  
  4. Spoon mixture evenly over crust, pressing down into the tin mold. 
  5. Freeze for at least 2 hours before serving.
