No Churn Kahlúa Espresso Vegan Ice Cream


Happy Foodie Friday not to mention my BIRTHDAY! Yup, that’s right.  Tomorrow is my birthday and the older I get, I have less shame in my game letting everyone know about it.  

I am sorta just being silly but to be honest, none of us are getting any younger so why not celebrate, am I right?! Which brings me right to the point of our post today! A recipe that is focused around ice cream because tomorrow IS National Creative Ice Cream Flavor Day and it just so happens to fall right on my birthday! How perfect is that? 

Pretty perfect if you ask me.  So when my wheels started turning, the first flavor that came to mind was coffee.  I love coffee.  Morning, noon and night.   I love the taste, I love the smell and I pretty much love any form that it comes in ESPECIALLY ice cream. 

Problem is, dairy free ice cream brands don’t have a coffee flavor but I have to say, I think I found the solution to that problem pretty successfully.

To be honest, I cannot take all the credit for this amazing coffee recipe.  In fact, Nigella came up with the foundation- espresso liqueur and instant espresso but I did add my own little twist and took it from full of lactose to totally dairy free. 

It really wasn’t that complicated.  Just a few whips of coconut cream with the addition of instant espresso, splash of Kahlúa and wait for it….a scoop of vegan protein and this concoction went to a whole new level.

No Churn Kahlúa Espresso Vegan Ice Cream


RECIPE

Ingredients: 

  • 2 cans full fat coconut milk, refrigerated overnight 
  • 1 scoop vegan vanilla protein powder (I used Plant Fusion)
  • 2 tbsp Kahlúa liqueur
  • 2 tbsp instant espresso 
  • 1/2 cup unsweetened vanilla almond milk 

Directions: 

  1. Place cream from coconut milk in a chilled mixing bowl discarding liquid (or reserving for later use). 
  2. Whip with a mixer or with a whisk until creamy.  
  3. Add in protein powder, liqueur, espresso and almond milk then whip again until combined.  
  4. Transfer into small pan or dish then cover with wrapping plastic and foil. 
  5. Place in the freezer for at least 6 hours. 
  6. Once ready to serve, remove and let thaw for approximately 20 minutes prior to serving. Using a scoop that has been run under hot water will also speed along the process. 
  7. Scoop into small serving bowls and splash with extra Kahlúa if desired.
