Open-Face Vegan Burger with Paleo Turmeric Mayonnaise
When it comes to veggies burgers, I tend to either make my own at home or just totally avoid them. I have tried a variety of kinds over the years but I found that they either don’t taste awesome or end up hurting my belly an hour or two later.
Back in the day, remember trying one that was soy based and it nearly killed my stomach. I’m pretty sure it was after eating it that I decided that soy was totally off limits and I eliminated it from my diet. Like I said, since then I usually just make my own – I know whats going in it and it tends to taste a lot better than most other frozen veggies burgers you can buy….that is until recently.
I cannot remember exactly when or who it was that first told me to try Beast Burger but I remember adding it to my mental list of “things to try”. Then someone else told me and then another person. After more than a handful of people mentioned to me to try it, I knew I had to but the problem was that my local grocery stores simply don’t carry this phenomenal sounding gluten free, soy free, Beast Burger…it was elusive.
Then, a week or so ago I decided to take the hour drive to go Christmas shopping and stopped in a nearby Wegmans – my only purpose being to find this Beyond Meat Beast Burger…and I did!
I immediately went home and made it for dinner and fell IN LOVE. Not only did it actually TASTE like a burger but it also didn’t hurt my belly after – WIN!
As soon as I ate it my head started spinning as to all the different ways I could prepare it (traditional burger, burger burrito, in a salad) THEN it hit me – this delicious Beast Burger would taste AMAZING with some homemade turmeric mayo.

Honestly, I have never made my own homemade mayo before. In fact, I have really avoided mayo over the last 12 years or so but I had a hankering for it and decided that if I was going to give in to my craving that homemade was the way to go.
To my surprise, it was stupid simple to make and came out pretty darn amazing. I didn’t even need to go to the store to pick up any ingredients either – I had all of them handy in my fridge and cupboard!
While clearly this open-face veggie burger is store bought, I was so happy with the way my mayo concoction turned out and how it tasted along with the Beast Burger that I just had to share!
Open-Face Veggie Burger with Paleo Turmeric Mayo
For the burger:
- 1/2 toasted gluten free hamburger roll
- 1 bib lettuce leaf
- 1 Beyond Meat Beast Burger (prepared by package instructions)
- 1/3 avocado, sliced
- 1 tbsp turmeric mayo, drizzled
Turmeric Mayo Ingredients:
- 1 tbsp white vinegar
- 3 tsp lemon juice
- 3 egg yolks
- 1 clove garlic
- 1 tsp turmeric
- approx. 1/4 cup coconut oil
- approx. 1/4 cup extra virgin olive oil
- pinch of sea salt
- Place vinegar, lemon juice, egg yolks, garlic and turmeric in a food processor and mix until combined
- Slowly but consistently, add the oil while blending and continue to blend until it reaches mayo consistency.
- Assemble the burger, drizzle the mayo and enjoy!
