Paleo Blueberry Muffins {Grain Free, Dairy Free}

Is there any one kind of food that you eat all year long no matter if it’s in season or not? Yeah, that’s me with blueberries.  I am not exaggerating when I say that I could LITERALLY eat them every day….and sometimes twice a day. 

Typically I put them in smoothies or top a smoothie bowl with them.  I even put them in my oatmeal on the days I am craving something warm but I decided to break from the ordinary for a bit and give them a try in some muffins. 

Yes, I realize that blueberry muffins are one of the most popular kind but I am not usually a muffin person.  That is until I made my Grain Free Mimosa Muffins which then left me craving blueberry muffins in the worst way. 

After nearly a month of saying I was going to whip these up,  I finally did and they turned out even better than I dreamed.  

Paleo, Grain Free, Dairy Free and Gluten Free Blueberry Muffin Recipe

You see, I added a secret ingredient to really take them to the next level.  Much like my mimosa muffins which taste like a burst of champagne sunshine due to the real orange juice and bubbly, these blueberry muffins are made with almond flour and flavored with just a splash of almond extract to take them to the next level. 







For the muffins

  • 2 cups almond flour
  •  1/2 tsp baking soda
  • pinch of sea salt 
  • 3 eggs
  • 2 tbsp coconut oil, melted
  • 1/4 cup Grade A Maple Syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 pint fresh blueberries


  1. Preheat oven to 325 degrees and grease or line muffin tin.
  2. In a medium bowl, combine almond flour, baking soda and salt. In a separate bowl, combine the eggs, coconut oil, maple syrup, vanilla and almond extract. 
  3. Add the dry ingredients to the wet ingredients and mix until well combined. 
  4. Fold in blueberries.
  5. Spoon or scoop batter into muffin tin.
  6. Place in the oven and bake for 20-25 minutes.
