Paleo Sweet Potato & Egg Breakfast Sliders


Happy Meatless Monday! So I have another quick, easy and super simple recipe to share.  If you recall, last Monday I shared a no-fuss Light & Healthy Broccolini and Mushrooms recipe and today I have another. 

I am actually all about recipes being quick and simple lately since I’ve been running around with my head cut off.  Like the broccolini recipe I shared last week, these Paleo Sweet Potato & Egg Sliders are versatile.  While the title suggests they should be enjoyed for breakfast, they’d be equally as yummy for lunch or dinner too!

I actually considered making a Paleo version of eggs florentine but then I realized that florentine referred to spinach which I can’t have so instead of making a convoluted version of eggs + kale “florentine” I just decided to scrape the idea and stack together this potato, kale and drippy egg deliciousness!

SO GOOD! 

I actually prepared the sweet potatoes by grilling them just for a little extra flavor with the char but would taste just as delicious prepared by baking them as well! 

I also chose to pan fry the egg but if you’re more into poaching or prefer them hard boiled, that would work as well! How you make this really all depends on your personal preference but you can’t beat the combination of flavors from the sweet potato, egg and kale! 

Plus it’s healthy, delicious, gluten and lactose free made with just real, whole foods. WIN! 

Paleo Sweet Potato & Egg Breakfast Sliders


RECIPE 

Ingredients:

  • 1 head of kale, washed, stems removed and chopped
  • 1-2 tbsp olive oil 
  • Sea salt & pepper to taste
  • 1 sweet potato cut into 1/2 thick slices
  • 3-4 eggs 
You might also like:  Rainbow Chard & White Beans

Directions: 

  1. Heat olive oil in a large wok, add kale and season with salt and pepper. 
  2. Cook until reduced down and slightly wilted but still green then set aside. 
  3. Heat grill and oil both sides of potato and grill for approximately 5 minutes on each side and set aside. 
  4. Heat a small pan on low heat and grease. Crack eggs into the pan and cook until the white become opaque, approximately 5 minutes for over easy or longer until desired doneness.   
  5. Assemble by placing cooked kale on top of potato slices then the egg on top of kale. 
  6. Season with salt and pepper, serve and enjoy!
