Pina Colada Smoothie by The Fit Cookie {Vegan, Gluten Free}


Happy Foodie Friday friends! 

Given the busyness of the last week with travel to the Reebok HQ and all the fun things I’ve had going on, I haven’t had much time to create a new recipe.  Of course I wouldn’t leave you hanging so I called my on my friend Sarah from The Fit Cookie to come up with something yummy to share. 

Sarah is a fellow food allergy sufferer so her blog is also dedicated to gluten free, dairy free and soy free deliciousness.  Today she put together this MOUTHWATERING looking Piña Colada Smoothie! 

I don’t know about you but I could SO go for one right now.  While I am over here drooling, I’ll let Sarah take it away and tell you just how you whip up one for yourself…

Can you believe we only have less than a month left of summer?! Time has flown by this year! My kids just started school on Monday so the rest of summer feels like it’s moving even faster now.

Since I’m determined to make the most of what’s left of summer, I created a lighter version of one of my family’s favorite treats: Piña Coladas. I used to make piña coladas at home until I decided that they had way too much sugar in them, so I decided to make a lower sugar piña colada recipe that can double as either a smoothie or a cocktail!

This drink is so simple and super easy to make as either a smoothie or a healthier cocktail. If you want a light piña colada with alcohol, just stir in 1 to 1-1/2 ounces of rum in this smoothie. This smoothie isn’t too thick so it works well as a Piña colada cocktail, too.

Traditionally piña coladas are made with cream of coconut (not to be confused with coconut cream) which is loaded with sugar (20 grams per ounce). Not exactly healthy! For the great coconut flavor in this recipe without all the calories and sugar, I used coconut flavored Stevia drops. It’s perfect! Lots of flavor and no added sugar.

If you want to give this smoothie a protein boost, blend in a few Tablespoons of your favorite vanilla protein powder for a more filling snack or post-workout fuel.

Got the tingles? Fresh pineapple has an enzyme in it called bromelain that can make your mouth and tongue tingle when you eat it. Some people don’t mind it, but others find that they really can’t stand it. If you don’t like eating fresh pineapple for that reason, try using canned pineapple in this recipe instead. Just make sure to choose pineapple that is canned in water or natural juice instead of syrup.


 

Pina Colada Smoothie

Makes 1 serving

Gluten-free, grain-free, vegan; Free of: peanuts, soy

Ingredients:

  • 3/4 cup unsweetened almondmilk
  • 1/2 cup light canned coconut milk
  • 2 cups fresh chopped pineapple (or canned pineapple that’s been drained)
  • Coconut Stevia drops to taste (I used 10 drops)

Instructions:

  1. Combine all ingredients in a blender or NutriBullet
  2. Blend until smooth
  3. Stir in the coconut Stevia drops to taste
  4. Enjoy immediately
