Quick & Easy High Protein Teriyaki Bean Pasta

Happy Meatless Monday! Now that summer is in full swing, I have to say that it is a heck of a lot busier than those lazy days that I used to have as a kid.  Sleeping in until whenever, waking up and eating cereal while cartoons played on the tube.  Collecting bugs, making forts with friends and creating adventures until our moms called us in for dinner.  

The table was always set just so.  Glasses full of cold lemonade and a hot meal served on each plate.  In those days I never had to worry about preparing the meal, just making sure I was back in time to eat and do my share of the clean up. 

Now, years later, life is no longer that simple.  We rush from here to there.  Busy with everything and nothing.  While the kids play I try desperately to check off my to do list.  Dinner is served and always eaten together but somehow it doesn’t seem the same.  Time ticks by quicker, convenience is key.  

Being the foodie and health conscious mom that I am, fast food solutions from a drive thru are out.  Instead, I look for something that is tasty, quick and easy that the entire family can enjoy.  It has to also be nutritious, work with my fueling plan and gluten free too.  

Solutions that fit that criteria aren’t easy to come by but thanks to Modern Table, meal kits that fit the bill do exist!

Usually when pasta comes in a kit it’s loaded with unhealthy preservatives, artificial flavoring and GMOs.  Modern Table, on the other hand, makes meal kits that are not only free of the preservatives, artificial flavor and non-GMO BUT they are also gluten free since they are made with bean pasta which means they are PACKED with protein! 

I actually highlighted Modern Table’s bean pasta in my Mexican Lentil Pasta Salad recipe from last Monday.  The difference between their plain lentil pastas and their Meal Kits is that the kits come with pasta, veggies, sauce and spices packets which you can modify to fit our needs and tastes.  

The Teriyaki Meal Kit comes with red lentil pasta noodles, carrots, red bell peppers and leeks plus the sauce (which comes in powder form) and a sesame seasoning packet.  You can make it your own by adding other fresh veggies like snow peas, eggplant or tofu.  I chose to add broccoli!

Making it is as simple as 1-2-3-4 and is ready in less than 15 minutes which is perfect for busy nights when you need something quick, nutritious and delicious.  

First, you boil the water with the noodles and veggies for 5-6 minutes (add in additional veggies here in the last few minutes of boiling). 

Then, while the veggies are boiling, whisk your sauce powder packet with 1/2 cup water and 2 tbsp olive oil.  The teriyaki sauce itself does contain soy.  If not a problem, then add it in or if you need a soy free alternative, consider making your own with coconut aminos.  

Next, you’ll want to toss your pasta in with your sauce and let stand for two minutes. 

Lastly, plate the pasta and sprinkle on the sesame seasoning along with whatever else your heart desires- crushed peanuts or sriracha would taste quite delish!  

Seriously, it is that simple.  Within 15 minutes you’ve got yourself a high protein pasta dish perfect for Meatless Monday or any day of the week, really! :)
