Rainbow Carrot Breakfast Hash {Low FODMAP, Low Histamine}


There was a time not too long ago where I was living off of pretty much just blueberries, chicken, beef and sweet potatoes.  Then, out of no where, my body decided that it didn’t want to tolerate potatoes anymore. 

This, of course, is already after discovering that I can no longer tolerate avocado, chocolate, strawberries and red wine.  As disappointing as it was to eliminate those foods from my diet, I made due.  I was willing to sacrifice what I had to in order to make my belly happy again. 

To find out that I was now incapable of digesting sweet potatoes brought the sad panda level of my food journey to a record low.  After crying and mourning the loss of yet another food to be eliminated from my diet, I decided it was time to get some REAL answers. 

So, I went to gastro and was diagnosed with SIBO or Small Intestinal Bacterial Overgrowth.  While there are antibiotics, there is no cure per se.  I have gone through a round of treatment but since I am still having some issues, a breath test has been ordered to confirm the diagnosis.  I will find out this Friday but in the mean time, potatoes of any kind are not allowed on my menu. 

Yes, it is awful because I LOVE my sweet pots but it also gave me the opportunity to come up with an alternative.

This Rainbow Carrot Breakfast Hash is the perfect low car/low FODMAP/low histamine alternative to potatoes!

While carrots clearly are not exactly the same as potatoes, I have to say that when made hash-style, they are a close second…or at least a pretty good sub.

The best part about these easy-to-make hash is that not only is it low FODMAP and low histamine but it is also SIBO diet friendly as well.  

SO until I can have my dearly beloved sweet potatoes back in my life, these equally sweet and satisfying tri-color carrots will be a mainstay on my breakfast menu.

RAINBOW CARROT BREAKFAST HASH


RECIPE

Ingredients: 

  • 1 lb rainbow carrots, tops removed and chopped
  • 2-3 tbsp garlic oil
  • 2 tbsp fresh rosemary, chopped 

Directions:

  1. Preheat oven to 450
  2. In a large bowl toss chopped carrots, oil and rosemary until evenly coated 
  3. Transfer onto a baking sheet. 
  4. Bake for approximately 15-20 minutes or until roasted/tender
  5. Remove and serve along with eggs, if desired.
