Rise and Shine Green Smoothie
If you’re anything like me then your last week or so may have been a little more indulgent than norm. Maybe you ate a few too many appetizers or one too many cookies.
For me, it was a dozen or so more glasses of wine (and champagne) than I really needed which is I woke up yesterday morning CRAVING something fresh, hydrating and full of green goodness.
As you know, I LOVE my smoothies but lately they’ve been more dessert themed. I’ve indulged in a S’mores Smoothie, whipped up a festive Chocolate Peppermint Smoothie and even found a way to make a Gingersnap Smoothie without the cookie crumble.
Don’t get me wrong, dessert smoothies are my jam but the recent assault my body has suffered from too much food, one too many treats and WAY too much alcohol left me wanting to trade in my traditional sweet smoothies for something a little bit more hydrating.
While my typical smoothies are all protein powder based, this smoothie is actually just made up of coconut water, frozen fruit, greens and the tiniest bit of ginger to soothe an angry belly. This smoothie is something I came up with a while back after a “very fun” night out and while I’ve named it the “Rise and Shine Green Smoothie” I affectionally refer to it as the “Hangover Smoothie” 😉
As I mentioned it has a little bit of ginger which aides in stomach upset but also includes other nourishing ingredients:
- coconut water to rehydrate
- coconut oil to increase energy and improve brain function
- mango, lemon juice and kale to help detox and alkalize
- cucumber to hydrate and flush out toxins.
Of course, you don’t need to be hungover to enjoy the benefits. All of the ingredients are also a great way to energize your body which makes this the perfect green smoothie to start your day with!
RISE AND SHINE GREEN SMOOTHIE
- 1 cup coconut water
- 1 cup frozen mango chunks
- 1/4 cup cucumber, sliced with skin on
- 1 tbsp coconut oil
- 1/2 cup chopped kale
- 1/4 inch nob of fresh ginger, peeled and grated
- juice from 1/2 fresh lemon
- Mix ingredients together in a blender.
- Pour into glass and garnish with sliced cucumber or lemon, if desired.
