Roasted Potato & Warm Arugula Salad


When it comes to recipes, I like to keep things simple.  Involving too many ingredients confuses me and the more steps between me and my food just increases the hanger.  

That doesn’t mean that I like things plain.  You see, there is a difference between plain and simple.  I like my foods to have flavor.  In fact, I like them to bursting with flavor which can be accomplished through incorporating, you guessed it, herbs and spices into my dishes.  

While I it would be easy (simple) to use the same combo of herbs and spices, I do try my hardest to change it up from time to time.  

Of course, buying truck loads of different spices isn’t always the most practical.  Not only do I not have room for them in my cupboard (which is full to the brim) but it would be nearly impossible to conceive all of the different spice varieties to use.  I might be a foodie but sometimes I need a little inspiration here and there which is why I LOVE RawSpiceBar.   

RawSpiceBar is this cool little spice subscription kit where you receive three recipe ready freshly ground flavors each month with recipe cards attached. 

For the month of October I received Schnitzel Spices, Caraway, Fennel and Anise Bread Spices and Horseradish and Mustard Seed Spices.  They each little packets along with a recipe suggestion as to how to use them.  

The Schnitzel Spices had a recipe for German Chicken Schnitzel, the caraway spice blend had a recipe for Caraway Cheese Soft Pretzels and the horseradish and mustard seed spices came with a recipe for Horseradish and Mustard Cabbage.

Being the simple (not plain) gal that I am, I was most intrigued by the cabbage recipe using the horseradish and mustard but since I’m not really a fan of cabbage, I decided to make it my own and whip up this Roasted Potato & Warm Arugula Salad.

At a glance, it doesn’t look like this dish contains a lot of spices but the combo of the arugula wilted with a little bit of olive oil and the horseradish and mustard seeds is amaaaazing.  

Of course it wouldn’t be complete without the roasted potatoes which were simply tossed in olive oil, salt and fresh rosemary and roasted to perfection!

Roasted Potatoes with Warm Horseradish & Mustard Arugula Salad


Ingredients: 

Directions: 

  1. Preheat oven to 425 degrees. 
  2. Toss potatoes in a medium bowl with 2 tbsp of olive oil, sea salt to taste and fresh rosemary.  
  3. Place on an baking sheet and bake for approximately 25 minutes. 
  4. While potatoes are roasting, heat a pan over high heat then add in remaining 2 tbsp of olive oil. 
  5. Sprinkle in RawSpiceBar’s Horseradish and Mustard Seeds, cover and cook until seeds stop popping.  About 1 minute. 
  6. Remove cover and remove from heat and then toss in arugula until just slightly wilted. 
  7. Transfer to a serving plate and then top with roasted potatoes. 
  8. Serve and enjoy!
