Shaved Asparagus, Radish & Fennel Salad

Happy, happy first day of May! I don’t know about you but I couldn’t be more excited that this month as finally arrived and from what I can tell, spring weather is here to stay (at least for another month or so).

While it has been a bit rainy lately, the weather has been much warmer and generally once we make it to May around here we are pretty safe from any sort of snow.  That might sound crazy to say but we really have gotten snow in May here before (on Mother’s Day, actually), so you can’t exactly rule it out but you can pretty much count on temperatures in the 40’s and above.

Anyway, all this mild weather we’ve been having really has me craving fresh, seasonal veggies from the farmer’s market.  Except, our farmers market isn’t quite “open” yet and really the only thing that’s seasonal and fresh around here is asparagus.

So, in the interim while I wait (another whole month), I decided to hold myself over and satisfy my seasonal cravings with a freshly shaved asparagus salad!

Isn’t it pretty? And it’s simple too.

While shaving the salad does take a little labor, I totally promise that it’s worth it.

Other than that, I used the spiralizer to shave the radish and the fennel and drizzled some lemon-tarragon dressing on top and violà- you have yourself a perfectly delicious shaved springtime asparagus salad!

Doesn’t it look delish? So fresh, so seasonal and so yummy your taste buds will be doing the tango 😉 Haha!

The lemon-tarragon dressing really ties it together and only takes seconds to make! So much better than store bought dressing, I promise.
