Shaved Asparagus, Radish & Fennel Salad

Happy happy HAPPY FRIDAY! Can you tell I am happy that it’s the end of the week? Man, this week has been INSANE for me.  Not only have I been up to my normal crazy antics but I also opened my brand new FITNESS STUDIO on Wednesday night! 

I am still in awe that I have my own studio and this whole idea has finally come to fruition…it’s been MONTHS in the making.  Classes start Monday, I’m pumped, ready and raring to go! 

Anyway, today’s Foodie Friday theme is “farmer’s market finds”.  Sadly, our farmers market isn’t quite “open” yet and really the only thing that’s seasonal and fresh around here is asparagus….so guess what I made? Yes, an asparagus salad! 

Shaved Asparagus, Radish and Fennel Salad Recipe

Isn’t it pretty? And it’s simple too.  

While shaving the salad does take a little labor, I totally promise that it’s worth it. 

Other than that, I used the spiralizer to shave the radish and the fennel and drizzled some lemon-tarragon dressing on top and violĆ - you have yourself a perfectly delicious shaved springtime asparagus salad!

Doesn’t it look delish? So fresh, so seasonal and so yummy your taste buds will be doing the tango šŸ˜‰ Haha! 

The lemon-tarragon dressing really ties it together and only takes seconds to make! So much better than store bought dressing, I promise.

Shaved Asparagus, Radish & Fennel Salad

with Lemon-Tarragon Dressing



  • 1 bunch of asparagus, shaved
  • 1 bunch of radishes, sliced thin
  • 1 head of fennel, sliced thin
  • Zest of 1 lemon
  • 3-4 tbsp fresh lemon juice 
  • 2 tbsp olive oil
  • 2 tbsp fresh tarragon, chopped 
  • salt & pepper to taste.

  1. Rinse and dry vegetables. 
  2. Remove woody stems from asparagus and use vegetable peeler to shave each stalk of asparagus and add to large bowl.  
  3. Remove leafy bunches from radishes and fennel bulb.
  4. Slice or spiralize radishes and fennel bulb adding then add to shaved asparagus. 
  5. In a small bowl, whisk together lemon zest, lemon juice, olive oil, tarragon and salt and pepper.  
  6. Plate shaved asparagus salad and drizzle lemon-tarragon dressing over top. 
  7. Enjoy immediately.
