Simply Delicious Spring Salads


I’m not sure why exactly I think I can do all the things but it is becoming increasingly more obvious to me that no matter how much I try to pack in my schedule, I cannot make there be more than 24 hours in a day.  

I swear I’m not complaining, I am just really trying to justify why I don’t have another brand new recipe to share for today.  Instead I will be sharing a few of my favorite spring salads!

Before I get into the recipes, I just want to recap my weekend with you a bit- even though it was busy it also was quite exciting. 

On Saturday I finally ran a race that didn’t involve extreme or crazy cold weather (recap coming Wednesday) which was followed by a day full of hair, makeup and all sorts of girly things to get ready for the Adult Prom.  It is a local fundraising event to raise awareness and money for SAVE Central New York (Suicide Awareness Voices of Education).  

It was all sorts of crazy fun and as much as I would have loved to rest and create a new recipe yesterday, I had to manage to find the energy to throw my daughter’s 5th birthday party which 20 of her little school friends were invited to.  Thankfully we had an exotic reptile animal show to entertain them so my brain really didn’t have to function too much 😉 

Anyway, what I am getting at was that it was a fun but insanely busy weekend so no time to spend in the kitchen creating.  Not all is lost though, instead of something new let’s revisit some of these simply delicious gluten free salad recipes!
