Spaghetti Squash Take Along Summer Salad + Giveaway

I don’t know about you but lunch is the one meal that I struggle with.  I have breakfast down pat whether it be an egg dish or protein packed smoothie, I can usually find something relatively easy to make and be set.  

Dinner is much of the same.  It’s always a protein, veggie and some sort of starch such as rice or gluten free pasta or of course, sweet potatoes.  

Lunch, however, is always a challenge.  If it isn’t fresh cooked chicken then eggs (again) are usually my go to. Or another protein smoothie but as you can imagine, it gets old after a while.  When I go out to eat, I LOVE to order salads BUT they never seem to be the same when I make them at home…especially when I make them to take along with me.  

For whatever reason, they don’t taste as fresh or as flavorful.  They end up being mushy and dull and well, boring.  So, I ALWAYS settle for what I always have.  Which can be also pretty boring.  

SO when I was given the chance to try out Rubbermaid’s new BRILLIANCE Salad and Snack Containers, I took at it as a challenge to rethink my lunch.  

While regular salads are my jam (and would be perfect for this container system), I decided to take one of my favorite summer salads and give it gluten free update.

I have made and shared my family’s recipe for Tabbouleh Salad in the past but instead of using quinoa as I have before, I took it up a notch and made it with spaghetti squash instead. 

GUYS, can I just tell you that I was TOTALLY missing out by not using spaghetti squash before.  Not only does it make the dish feel more hearty, it also takes it from a side dish to something that can actually be considered lunch. 

With typical packed lunch salads the one thing that I despise the most is how soggy it gets BUT with Rubbermaid’s BRILLIANCE container, that is just not the case.

The salad container comes with adjustable insert trays and dividers that create separate compartments within to the container to allow controlled placement meaning NO MORE MUSHY SALADS. Plus it’s BPA free and 100% leak proof.  YAAAS.

Since tabbouleh is normally prepared ahead of time along with the bulgar wheat (or quinoa sub), I was excited to try it with the spaghetti squash (which would get über mushy if it was combined before).

I was delighted to find that not only did all my ingredients fit perfectly in the top container but the summer salad tasted just as fresh as I imagined it would.  The little dressing container in the middle might just be my favorite.

The most tedious part of this entire ensemble is actually roasting the squash…which takes about 30-45 minutes depending on the size.  

The rest, however, is a breeze.  I chose to chop up my veggies while the squash was in the oven then once it cooled, I threw it all in the separate compartments of the container and was good to go. 

Spaghetti Squash Take Along Summer Salad



  • 2 cups chilled spaghetti squash*
  • 1/3 cup tomatoes, finely diced
  • 1/3 cup English cucumber, finely diced
  • 1/3 cup parsley, finely chopped
  • 1/6 cup (or 2 TB + 2 tsp) scallions, ends trimmed and thinly sliced
  • 1/6 cup (or 2 TB + 2tsp) mint, finely chopped
  • 2 TB extra virgin olive oil
  • 3 TB fresh squeezed lemon juice
  • Pinch of sea salt  


  1. Place chilled spaghetti squash in bottom container. 
  2. Carefully distribute tomatoes, cucumber, parsley, scallions and mint between each side of the top divider. 
  3. Pour olive oil, lemon juice and salt in dressing container.
  4. Once ready to eat, combine top ingredients with the spaghetti squash then carefully shake and toss in dressing.

*TIP:  Prepare spaghetti squash by cutting in HALF (not lengthwise), scooping out seeds and slicing off bottom half.  Season with oil, salt, pepper and roast at 400 degrees for 30-40 minutes for best results.
