Sweet Potato and Blueberry Superfood Salad


Over the last few months, there have been very few things that I found I could eat…mostly due to my digestive issues which I’m finally starting to get a handle on. 

Thankfully, the small handful of things I have been able to eat, are also a few of my favorite foods AND perfect for refueling with after a workout.  

As most of you know, I love sweet potatoes and I really, really love blueberries which both have amazing post-workout benefits.  Sweet potatoes are a complex carb that helps to restore glycogen levels and some studies suggest that blueberries might help reduce post-workout muscle soreness. 

While I can find a variety of ways to combine both into a recipe, the easiest way is probably a salad…like this one that is loaded with superfoods.

Not only does it have honey and cinnamon roasted sweet potatoes and fresh blueberries but it is also sprinkled with a chopped a Health Warrior Dark Chocolate Pumpkin Seed Bar – another of my quick and easy ways to refuel after a workout. 

I typically will eat them on the go but also find that they add some pretty amazing flavor as a topping too.  The combination of the dark chocolate (which has post workout benefits too) and pumpkin seeds (which have key nutrients for recovery) taste AMAZING with the flavors of the honey cinnamon roasted sweet potatoes and fresh blueberries – not to mention the drizzled balsamic.  YUM.

Sweet Potato and Blueberry Superfood Salad


 

RECIPE 

Ingredients: 

  • 1 medium sweet potato
  • 1 tsp ground cinnamon 
  • 1 tbsp Nektar Naturals Honey Crystals 
  • 1.5 cups baby kale 
  • 1/2 cup fresh blueberries 
  • 1 Health Warrior Dark Chocolate Pumpkin Seed Bar, chopped 
  • balsamic glaze or balsamic vinegar, drizzled. 
You might also like:  Chocolate Espresso Chia Protein Pudding

Directions: 

  1. Preheat oven to 400 degrees.
  2. Microwave sweet potato for approximately 8 minutes then dice into 1″ pieces
  3. Toss in a bowl with cinnamon and honey crystals. 
  4. Evenly space sweet potatoes on a baking pan and bake for approximately 20 minutes. 
  5. Remove and let cool for 5 minutes while preparing salad. 
  6. Plate kale, blueberries and chopped dark chocolate and pumpkin seed bar then add sweet potatoes. 
  7. Drizzle with balsamic glaze or balsamic vinegar to liking.
