Sweet Potato Recovery Fries {Paleo}


I mentioned on Friday that I’ve been having a rough go of it lately; not rough in a serious way but more in an overwhelmed way.  Life has been busy to the point that I barely remember to put on underwear in the morning.  To say that I’m not functioning would be a gross understatement and I wish that was an exaggeration…about the only thing I’ve stayed on top of is running and even that part of my schedule is beginning to suffer.

So, instead of trying to ~balance~ it all, I decided to pull my kids out of school, hop in the car and drive them to the nearest Great Wolf Lodge for a little R&R….as in REST and RECOVERY.   I wouldn’t consider bringing kids to a waterpark relaxing so to speak but some waterslides are quite necessary for my mental recovery.

In the spirit of recovery and food (since it is Meatless Monday), I figured it’d share my favorite sweet potato recovery recipe.  I also happened to prep and pack these for my trip to Great Wolf Lodge since they offer about ZERO things on their menu that is allergy friendly/healthy. 

Not only are these little sticks of sweet potato heaven essential to me staying on track while I am away from home but they are also ~so necessary~ as part of my half marathon training schedule. 

 

These sweet potato recovery fries are made with turmeric and cinnamon which have anti-inflammatory properties to help you refuel and recover quicker. The sweet potatoes themselves also offer amazing benefits since they are a great source of complex carbohydrate, beta-carotene, manganese, vitamin B6 and C as well as dietary fiber. I know what you’re thinking.  FRIES for RECOVERY.  Yes.  The answer is yes.  And I will tell you why.

Mix it together with some nourishing coconut oil and you’ve got yourself one amazing post-workout treat. 

Anti-Inflammatory Spiced Sweet Potato Recovery Fries


RECIPE 

Ingredients: 

  • 1 sweet potato
  • 2 TB coconut oil, melted 
  • 1/2 tsp ground cinnamon 
  • 1 tsp turmeric powder 
  • sea salt to taste

 

Directions: 

  • Preheat oven to 425 degrees.
  • Cut sweet potato lengthwise into strips. 
  • In a large bowl, pour melted coconut oil then season with spices and salt evenly covering the sweet potato pieces. 
  • Arrange evenly on a baking sheet and bake for approximately 10 minutes then flip pieces and bake for another 10 mins. 
  • Remove, let cool & enjoy! :)
