Thai Basil Waffle Nachos With Sriracha Peanut Sauce {Gluten Free}

Have you ever come up with the most brilliant idea, executed it to perfection but then tried to capture the fruits (or waffles in this case) of your labor in a photograph and it just did NOT do it justice? NO? Just Me? Okay. 

Let me back up a second.  Today I am linking up with my fabulous Friday Foodie co-hostesses to bring you WAFFLE RECIPES because today is International Waffle Day! From the second that I saw that waffle recipes were on the agenda, I knew I wanted to come up with something creative.  My first thought was to make waffle tacos but then I realized that my waffle iron was square and not circular so I threw that idea out the window.  

That was when I moved on to the idea of making waffle NACHOS but since I can’t really have all the typical things you’d put on traditional nachos, I decided to make Thai basil waffle nachos instead!

For the actual waffles, I made waffles like I normally would and then added coconut milk, shredded coconut, lime juice and freshly shredded basil.  As soon as they came off the iron I couldn’t resist taking a bite and started droooooling.

I probably should have just left them alone the way they were because they tasted like pure perfection but I realllly wanted to drizzle some sriracha peanut sauce on them because well, SRIRACHA.

That was where I ran into some trouble though.  I didn’t really have the proper kitchen tools to drizzle so I kinda haphazardly flung the spoon around until the waffle nachos were sufficiently covered at which point I realized that the sauce and the waffles photographed similar in color….#fail. 

So that these didn’t look like a big orange and tan blob a bit of color was necessary so I figured some bright green scallions would do the trick….which they did but it also left me desperately wanting some bright purple cabbage too so that it was clear that these were THAI waffle nachos and NOT cheesy waffle nachos.  Ugh.  

Anyway, despite them looking a bit cheesy in photos, I can most certainly promise you that they are nothing cheesy, in fact, they are BURSTING with Thai flavors galore.  Between the mix of coconut, lime and basil in the waffles and the sriracha-peanut sauce (which I made with PB2, by the way), these savory waffles would be perfect for breakfast, as a snack or even dinner!

Thai Basil Waffle Nachos With

Sriracha Peanut Sauce {Gluten Free}


RECIPE

Ingredients: 

Waffles:

  • 1 cup gluten free baking mix
  • 1 large egg
  • 2 tbsp olive oil
  • 1 cup coconut milk
  • 1/2 tsp baking powder
  • 2 tsp lime juice
  • 1/4 cup shredded coconut flakes
  • 3/4 fresh basil leaves, chopped
  • 1 bunch of scallions, diced (optional- for garnish only)

 

Sriracha Peanut Sauce: 

  • 1/4 cup PB2
  • 2 tbsp coconut milk
  • 2 tbsp sriracha sauce

Directions: 

  1. Heat waffle iron to medium (setting #3 on mine). 
  2. Whisk together waffle baking mix then add in coconut flakes and basil. 
  3. Pour into waffle iron close and cook until iron indicates that is done (mine beeps) approximately 5-7 minutes. 
  4. While waiting for waffle to cook, whisk together sriracha-peanut sauce.  
  5. Make as many waffles as mix will allow (I was able to make 3). 
  6. Cut into triangular pieces and plate. 
  7. Pour sriracha-peanut sauce over top then garnish with scallions if desired or left over basil if you prefer instead. 
  8. Enjoy!
