The Best Gluten Free Blondies Ever {Vegan & Paleo}

So this week we are sharing recipes from Pinterest that we’ve been dying to try.  I’ve pinned literally thousands of recipes and every time I pin one, I SWEAR I am going to give it a try. I sat down with the intent of finding one of those recipes, scoured through my boards only to find myself thinking of how I’ve wanted to make gluten free blondies for the longest time. PLUS today is National Blonde Brownie Day so I kinda had to!  

Problem is, I had no blondies pinned, I had always planned on just reformulating my Double Chocolate Protein Brownies and to make a blondie version so I started searching Pinterest for some recipes to try.  

I found lots.  Ones that promised to be moist, others that promised to be decadent and even a few that exclaimed they only needed three ingredients.  Each recipe looked amazing- I hardly knew which one to pick….so I didn’t.  Truth is, baking scares me a little.  I never know exactly how it’s going to turn out so I tend to stick with what I know…so I did.

I took the opportunity to remake my own Double Chocolate Sweet Potato Protein Brownies into Sweet Potato Blondies.  The recipe only really required that I swap out the chocolate protein powder for vanilla and instead of chocolate chips I used macadamia nuts…the white chocolate drizzle was my attempt to make them look fancy.

Actually, I apparently didn’t do all that great of a job drizzling them as my 4 year old asked me if my 2 year old did it… :( THANKFULLY my decorating skills (or lack thereof) doesn’t change how AMAZING they taste.  Seriously, I can’t stop eating them.  

Just like the Double Chocolate Sweet Potato Protein Brownies I made previously, they are moist, decadent, gluten free, vegan and SUPER simple to make.  You don’t even need a fancy mixer, a spoon and a bowl will do!

White Chocolate & Macadamia Nut Sweet Potato Blondies {GF, V}


 RECIPE 

Ingredients:

  • 1 large sweet potato steamed + mashed (skin removed), about 1 1/2 cups
  • 1 cup raw almond butter
  • 1 25 gram scoop vegan vanilla protein powder (optional but add flavor) 
  • 1/8 cup maple syrup (or raw honey if not vegan)
  • 1 flax egg (or regular egg if not vegan)
  • 1 tsp baking soda
  • 1/4 cup chopped macadamia nuts
  • 2 oz  vegan white chocolate 

Directions:

  1. Preheat oven to 350 degrees. 
  2. In a large bowl mix together mashed sweet potato, almond butter, protein powder, maple syrup flax egg and baking soda.
  3. Fold in macadamia nuts. 
  4. Spoon into an 8×8 baking dish.  Batter will be thick so be sure to even it out. 
  5. Bake for 22-25 minutes. 
  6. Remove, let cool then cut into squares
  7. While cooling, heat 1 oz of broken white chocolate pieces in the microwave 20 seconds at a time until melted. 
  8. Drizzle white chocolate on top of each bar with a spoon.
  9. Enjoy! :)

Notes: I used Charm School Chocolate for the vegan white chocolate as it is dairy, gluten & soy free.
