Refreshing Thirst Quencher Green Smoothie

I woke up this morning feeling a little thirsty.  Not because I drank too much (ok, I did have a few yesterday) but because I was out of my routine and wasn’t consuming enough water.   I have been chugging H2O upon waking but I was craving something fresh and hydrating and then I remembered I had cucumber and mint in my fridge. BINGO!

I LOVE cucumbers and especially when they’re cold and crisp and combined with mint it really gives it that summer flavor.  I also decided to add some coconut water for an extra hydration boost.  I plan to go trail running this morning and it is supposed to be a hot one so this hydrating green goodness is the perfect way to start my day!

Thirst-Quencher Green Smoothie
Serves 1
Write a review
  1. 1/2 seedless cucumber, sliced (no need to remove skin)
  2. 4-5 mint leaves
  3. 1/2 cup coconut water
  4. 1/2 cup filtered water
  5. splash of lemon juice
  1. Combine all ingredients and blend until smooth
  2. Garnish with cucumber and mint if you're fancy
  3. ENJOY :)

I didn’t make the smoothie too thick because I wanted to be able to enjoy it without too much effort. If you want it to be extra cold you can add ice or have previously frozen the cucumber and make it that way. Either way, it is sure to quench your thirst on a hot day, or help you to rehydrate when you have a massive morning hangover 😉
