Toasted Goat Cheese & Pecan Sweet Potato Dessert Bites

Now that school is in full swing, I feel like the weeks are going by at lightning speed.  Just a few weeks ago I was whining because I was told that I should avoid sweet potatoes due to a SIBO diagnosis.  Well, after three different test and a whole lotta no real answers, I am still unsure whether or not I should be avoiding my favorite variety of spuds.  

So, until I know for sure that sweet potatoes are on my illegal foods list, I am going to continue to include them in my diet…because I do what I want. 

So, to celebrate the reintroduction of sweet potatoes on the menu, I am sharing a SUPER yummy, SUPER easy and definitely fall inspired recipe!

In fact, I plan on sharing a few different fall appetizer and treats over the next week, so be prepared to get. yo. fall. on! 😉 

Toasted Goat Cheese & Pecan Sweet Potato Dessert Bites - the perfect gluten free appetizer for fall!

Previous to my little SP hiatus, slicing up them up, tossing them in some coconut oil and toasting them up in the oven was my favorite way to enjoy them.  

Obviously, I wanted to get a little more creative and festive for fall so I added a small slice of fresh goat cheese, pecan halves and just a smallll drizzle of fresh maple syrup and OH MY GOODNESS that just took it to a whoooole other level. 

The best way to describe these would be “like a sweet potato cheesecake” which is a direct quote from my husband who sampled more than one after they were fresh out of the oven.  

Despite my dairy intolerance, I also sampled a few (because goat cheese is hard to resist, okay?) and I have to concur, they do taste a lot like a little bite of dessert.

Toasted Goat Cheese & Pecan Sweet Potato Dessert Bites - the perfect gluten free appetizer for fall!

Ps.  Don’t be fooled by the thyme…it’s just there for presentation purposes 😉 

Toasted Goat Cheese & Pecan Sweet Potato Bites {Gluten Free}



  • 1 medium sweet potato
  • 2 tbsp coconut oil 
  • 1 5 oz log of plain goat cheese
  • pecan halves
  • 2 tbsp Organic Grade A Maple Syrup



Preheat oven to 425 degrees. 

  1. Slice sweet potato into even discs, discarding each end. 
  2. Toss with coconut oil in a medium size bowl. 
  3. Place on baking sheet and bake for approximately 10 minutes. 
  4. While baking, slice appropriate amount of goat cheese- 1 slice per disc. 
  5. Remove sweet potatoes from oven then place a slice of goat cheese on each, topped with pecan halves.
  6. Place back in oven on broil (high) for approximately 5 minutes or just as pecans turn golden brown. 
  7. Remove from oven and lightly drizzle with maple syrup.  
  8. Serve immediately.
