Toss the Flavor in Quinoa Tabbouleh with Redpack Tomatoes! {Gluten Free, Vegan}

Happy Friday, y’all! I don’t know about you but I couldn’t be more excited for the weekend to get here.  I feel like I have been saying this a lot lately but thing have been crazzzzy busy.  My studio is finally chugging along again, half marathon training just reach it’s peak (heading to taper town soon) and we will be celebrating both of my daughters birthday parties this weekend!

With all the craziness going on, I didn’t have time to come up with a new recipes for today’s theme (Heirloom Recipes) BUT that is okay since I had the perfect family recipe sitting in the archives from last May! 

Never minding the fact that the rest of the post is going to reference that we are in the month of May (I wish!), this recipe is timeless and can be made no matter what time of the year it is.  It’s also super simple to make too, yay! 

Gluten Free & Easy Quinoa Tabbouleh Recipe.  The perfect healthy summer salad!

They will be sharing their new collection of Redpack salad recipes on Facebook featuring Redpack Petite Diced Tomatoes along with seasonal fruits and vegetables. 

As part of the promotion they will also be giving away a $400.00 Grand Prize Picnic Gift Basket that include all the tools you need to chop, spin, mix, dress and toss in your favorite Redpack summer salad! 

Redpack was also nice enough to send me some of their petite diced tomatoes to try out in my favorite summer salad which just so happens to be my great-grandmother’s tabbouleh recipe. 

Redpack Tabbouleh Recipe

Some of you might or might not know that I am part Lebanese.  My grandmother was 100% Lebanese and while she was born here, her parents were straight off the boat from Lebanon!

Among a variety of Lebanese dishes I enjoyed growing up was tabbouleh which is a cold salad traditionally made with bulgur wheat, cucumbers, tomatoes, mint, olive oil and lemon juice.  A lot of other traditional recipes also call for parsley but my grandmother and the women in her family were known to do what they wanted, when they wanted and how they wanted and someone didn’t like parsley so no parsley it was! 

I did have to break tradition a little bit and exchange the bulgur for quinoa in order to make this gluten free.  I’m hoping my grandmother and her ancestors approve šŸ˜‰ 

Redpack Quinoa Tabbouleh




  • 3 cups of cooked quinoa 
  • 2 cucumbers, diced
  • 14.5 oz can Redpack Petite Diced Tomatoes, drained or 1 fresh tomato, diced.
  • 1/2 cup mint, finely chopped
  • 3/4 cup olive oil
  • 3/4 cup lemon juice

  1. Mix quinoa with the cumbers, tomato and mint.
  2. Add olive oil an lemon juice and mix together.  
  3. Refrigerate for 2-3 hours.  
  4. Add more lemon juice to taste, if desired. 
  5. Serve and enjoy! 

I have to say that my family was rather impressed by how fresh the Redpack tomatoes tasted and my husband even remarked that he thought they tasted as if they were picked right off the vine!
