Valentine’s Day Honey Salted Popcorn Recipe


Happy 1st day of February! I can’t believe we are already into the 2nd month of 2016.  While January flew by rather quickly for me, it was a rather productive month.  I have a feeling that February will be equally as productive with lots of fun things happening like the SUPER BOWL this weekend (check out my healthy foodie football recipes here) and of course, Valentine’s Day on the 14th.  

I have to admit that I am really not one to celebrate Valentine’s Day.  As my husband can attest, I am not all that romantic and I really don’t eat too many sugary sweets.  I honestly prefer a treat with a little bit of saltiness mixed in, just like my personality which is what inspired this Valentine’s Day Honey Salted Popcorn recipe! 

I am smitten about this snack not just because it’s healthy but also because it’s easy to make. With just a quick stove pop top, the coconut oil popped corn is ready to be sprinkled with salt, dusted with Nektar Naturals Honey Crystals, drizzled with melted vegan chocolate with the optional addition of festive Valentine’s Day M&M’s for fun!

Valentine's Day Inspired Healthy Honey Salted Popcorn Recipe. Made with Nektar Naturals Honey Crystals it's the perfect sweet and salty Valentine's Day snack to treat the kids or sweetheart with.

What makes this popcorn uniquely delicious is the Nektar Naturals Honey Crystals.  The fact that you can sprinkle them without all the sticky mess just makes this snack that much sweeter.  They are actually pretty fantastic sprinkled on just about anything but combined with the sea salt? Ridiculously perfect.

Let’s not forget about that chocolate either (I mean, how could we?), drizzled over this sweet and salty popcorn it is EVERYTHING…especially with more honey crystals sprinkled on top.  Oh. My. Yum.

Honey Salted Popcorn


RECIPE

Ingredients: 

  • 1/4 cup coconut oil, melted  
  • 1 cup popcorn kernels 
  • 2 tbsp Nektar Naturals Honey Crystals + more for dusting
  • 2 tsp sea salt, or to taste 
  • 1/4 cup vegan chocolate chips, melted
  • 1/4 cup Valentine’s Day M&Ms to mix in (optional)

 

Directions: 

  1. Heat oil and kernels in a large wok on the stove top on high. 
  2. Cook until you can no longer hear kernels popping.
  3. Transfer to a large bowl and toss in honey crystals and sea salt while hot. 
  4. Toss in M&Ms (optional).
  5. Melt chocolate chips in microwave- heating every 20 seconds and stirring until melted. 
  6. Drizzle over popcorn and sprinkle more honey crystals on top.
  7. Once chocolate hardens, serve and enjoy!
