Vegan Carrot Cake Protein Smoothie


Did you know that Saturday, February 3rd is National Carrot Cake Day?

As most of you know, I am really not much of a cake person but I do have a special place in my heart for carrot cake.  It might be because my mom is a huge carrot cake fan and growing up, we would always be on the search for a carrot cake to surprise her with for her birthday.  

I also am just a fan of carrots in general – they are one of the few veggies that I enjoy raw and really really love cooked.  I often make roasted carrots  for dinner and have even make little No Bake Carrot Cake Bites before that I enjoy post-workout since they’re made with potassium packed Medjool dates and are pretty darn delicious. 

This Vegan Carrot Cake Protein Smoothie is also a fav.  In fact, it made it’s debut on the blog back in 2014 when I first got started blogging.  The post itself is laughable and the food photography is more than lacking but the yummy recipe has not changed. 
Super simple, less than 5 ingredients Vegan Carrot Cake Protein Smoothie! [Dairy Free, Gluten Free]

The smoothie is honestly super simple to make and only requires a handful of ingredients.  With just dairy free milk, a carrot, some frozen mango and spices you’ve got yourself a really satisfying smoothie that tastes a lot like carrot cake!

Vegan Carrot Cake Protein Smoothie


RECIPE 

Ingredients: 

  • 1 cup of unsweetened vanilla almond milk
  • 1 chopped carrot
  • Handful of frozen mango or 1/2 frozen banana
  • 1 scoop of vanilla protein powder ( I used PlantFusion)
  • Several dashes of cinnamon
  • Dash of nutmeg
  • Dash of ground ginger
  • Dairy free whipped topping, optional
  • Chopped pecans, optional

Directions: 

  1. Blend milk, carrot, mango, protein powder, cinnamon, nutmeg and ground ginger until smooth. 
  2. Pour into glass then top with dairy free whipped topping and chopped pecans, if desired.
