Watermelon, Cucumber and Blueberry Goat Cheese Bites


Happy first unofficial Foodie Friday of summer! While the season might not actually start until later this month, it’s feeling all sorts of  summer-like here.  The kid’s school year is winding down, the sun is coming up sooner, runs are happening earlier and the heat is here to stay…or at least that is what the forecast says.  

I’m not one to spend too much time in the sun but I have to say that it feels nice to finally see it make an appearance after the dreary days of spring and winter.  I especially like getting together for cookouts or outdoors parties.  

Our summer season is pretty short where I live so I cherish the time that we actually get to enjoy each other’s company without having to be cooped up inside.  Plus the cold beverages and chilled treats are extra tasty when it’s warm.  Like these watermelon bites.  They scream summer and were inspired by our “raw food recipe” theme today (ya know, sans goat cheese)!

Admittedly, I was in a bit of a fog when I was perusing the aisles of the grocery store.  It was around 6 AM, my half cup of coffee had barely kicked in and the only thought on my mind was making something with watermelon taste amazingly delicious. 

Pairing it with cucumber was something I knew I wanted to do before I arrived.  I grabbed my cuke, found the fresh mint and just as I was making my way to the register, I saw some blueberry goat cheese staring at me.  It said…”Gosh! I’d pair SO well with that watermelon and cucumber.  You should TOTALLY grab me” to which I am pretty sure I mumbled out loud “Yes, you are TOTALLY right”.

Crazy and under caffeinated, I grabbed the goat cheese and checked out.  

Even when I was assembling this easy peasy appetizer later in the day, it STILL didn’t occur to me that the cheese part of it ISN’T raw. All I kept thinking was how fantastic it was going to taste.  Each little bite like a burst of summer.  

It actually wasn’t until I started WRITING this post that I was reminded that the recipe was supposed to be focused on RAW ingredients.  Feeling a bit betrayed I mentally cursed at the blueberry goat cheese.  My weakness is blueberries and it knew it.  It KNEW I would pick it up and make it part of my recipe.  

Not all is lost though, if you’re not vegan and love goat cheese then you absolutely NEED to give this a try.  If you are vegan then simply omit the goat cheese OR if you’re feeling ambitious whip up some vegan blueberry “cheese” of your own.

To be honest, other than giving one of the bites a taste test with the blueberry goat cheese (which was just as amazing as I thought it would be), I ate the rest of them without the cheese.  It was refreshing.  It was fab.  It was like a sweet summer party in my mouth.

Watermelon, Cucumber & Blueberry Goat Cheese Bites


RECIPE

Ingredients: 

  • 1lb watermelon, diced uniformly 
  • 1 European cucumber, sliced into discs
  • 1 4oz log of blueberry goat cheese, cut into small cubes (optional)
  • 1 bunch fresh mint leaves

 

Directions: 

  1. Assemble by plating cucumber, watermelon then goat cheese and mint on top.  
  2. Secure bites with a toothpick
  3. Serve chilled.

Makes approximately 24 bites.
